"Inspired by my upbringing in Panama, Central America - Fishing with my Dad in both the Pacific and Atlantic Oceans, picking fresh mangos at the bus stop for breakfast & epic surfing trips (I vividly remember my first barrel). I wanted to bring that feeling to Wrightsville Beach with a staple in the Panamanian diet, ceviche, tropical fruit, plantains, etc.."

Get Hooked On Ceviche's Panama Food With A Kick

I had the ropa vieja – braised and shredded beef in a spicy pepper broth served with coconut rice and mixed vegetables. The dish was piping hot, flavorful and spicy without being either too rich or too peppery, as well as quite filling. Enjoy the tastes of Panama right here in Wilmington! This cozy Latin-American restaurant houses a bar made of reclaimed wood straight from Panama as well as a large deli counter for easy ordering. Relish their signature dish after their namesake that involves the unique cooking style of chopped fish in acidic juices that "cook" the meat rather than using a hot pan. Other special dishes will include arroz con pollo and ropas Viejas.

He even has his eye set on the ultra-exclusive Black Tot "Last Consignment" British Royal Navy Rum, a label that can run up to $250 per pour.
